Both shows I've been watching lately, and both are educational, one in a different setting than the other. But you'll have to see for your selves!

Are you smarter than a 5th grader. Cash cab is a fun show, too.

I find that there's no sense of danger in cash cab. In the worst case scenario they are forced to get out of the cab after being driven many blocks free of charge. The most they can win is $1200 and its divided by everyone in the car. The only episode I saw involved two guys and girls who answered every question correctly including the video bonus without using "helps" and got $1200. And then two guys who didn't know the name of the Washington Monument (after being shown the video of it).
5th grader is more of a show where you laugh at the contestants rather then cheer them on. You'll get a high school English teacher on the show or a recent graduate from Yale who will miss a $500,000 Grade 5 Math question because they didn't know what 5^2 equals. I preferred the Canadian version of the show with Colin Mochrie simply because I grew tired of questions like "Who was the youngest American president?" "What is the capitol city of Wyoming?" Give me some history I can relate to!
And as an off topic follow up; this is why I don't like American quiz shows that much:

Side effects may include: dry mouth, nausea, painful rectal itch, hallucination, and death.

Hmm, we don't have cash cab here in the UK so I can't comment on that programme.
However, we do have:
"Are you smarter than a 10 year old", which I'm guessing is exactly the same as "Are you smarter than a 5th grader". I haven't really watched it much, but what I have seen of it...wow, some of those kids are smart.
It's like...how do they know that? Pushy parents, maybe. Forcing them to learn things against their will!

In reply to Galactimus,
The thing I found fascinating, and I could be wrong in my assessment, is that the host of Cash Cab does about as good a job as the host of Jeopardy, and probably with substantially less funding and endowment - whilst driving a Car, no less.
And yes, I agree that 5th Grader is a bit more of a parody than an entertaining game show. Nevertheless, it does serve its purpose as educational, to some extent.
