I quit the game before many of these jobs became available, so I can only answer based off my own experience.

I played Ranger for the majority of my time on FFXI, and I actually liked it very much. Subbing Ninja allowed me to deal a lot of damage while still being able to protect myself from death when I inevitably pulled hate/aggro. The job was expensive, so not just anyone could play the job well. Perhaps that's why I liked it so much. I was always in demand and I enjoyed pulling mobs for the rest of my group/party/PT.

WHM/SMN but why? Didn't care for the hack and slash approach, just liked to support the other characters. Did want to get BLM up but never had the time.

All-in-all, my favorite job was THF. It was a melee job, but it took a lot more strategy and skill to be good at it than some of the other melee jobs where you basically just swing, hit, save up for WS, use WS, etc.

I never planned to be a THF, but I began leveling it in order to farm gil and buy incredible gear for my SAM. Well...my SAM was at 45 and never ended up being leveled again, sadly...despite the awesome gear I did buy for it, haha. I played THF, farmed gil...bought some THF gear, kept leveling, and...really, in the end, the job was absolutely awesome.

In my opinion, though I'm sure some will disagree because everyone rushed to THF/NIN as fast as possible, THF/WAR was THE BEST for exping. It made me so much more versatile than I would've been as THF/NIN. THF/NIN obviously has its uses in very late game, being able to solo some cool stuff, but...I absolutely loved ripping it up as THF/WAR when exping.

Side Note: I also leveled RNG to 75, but that was mainly for end-game assistance in my HNM LS. I was THF, at heart, but RNG was also a pretty fun job, for sure.

My main was WHM, but my favorite was BLU. I could solo well, do nice damage, and play a unique support role. BLU was the only melee job I could stand and being a taru I had enough MP to cast a lot of spells and barely melee anyway.

Summoner was for sure my favorite job. I loved how the summons were so beautiful, but I admit that the MP drain was kind of disappointing. After that, it was a tie between Bard and Dancer. I really liked how I always got a group on my Bard, and the whole melee healer was a unique experience for me, it was the first healer class, and the only healer class out of any game that I have ever enjoyed playing.

I only had two 75 jobs (DRG & COR) and a slew of 37s, but I must say that COR was very fun. Even the entire backstory dealing with the AF and job unlock was cool. I really enjoyed merit PT's with COR and BRD rolling dice, slashing with Joyeuse, stepping back to use Barrage and Slug Shot, I was constantly busy and doing significant DD and support at the same time. It's too bad that one of the reasons I finally quit was because that it was completely insane funding the job. I was a bit of a lone wolf in the game, and didn't have much gil coming in.

Easily BLM for me. The abilty to solo 1-75, HUGE damage with the right merits, and you were always in demand in the HNM/Dynamis/Limbus scenes. I almost loved BRD as much but that was more for the quick merits but not really the satisfaction of playing the job.
